Let's get cooking these school holidays!

 
If you're having one of those days where you are at a loss for something to do with the kids, look no further than your very own kitchen! Get the kids into the kitchen and get stuck into these fun recipes during the school holiday.
 
Inviting your kids to join you in the kitchen, or allowing them the freedom to take on tasks themselves, is a fantastic opportunity to teach them skills that will last them a lifetime.
In fact, cooking with your kids teaches them more than just cooking. When kids are in the kitchen, you can help improve their skills in maths, creativity, health & nutrition, history, chemistry, physics, and so much more.
No matter the age and kitchen confidence level of your child or children, make sure that you’re in no hurry when cooking together. By setting aside plenty of time, odds are that there will be less frustration from hangry family members! Plus, having enough time allows for your child to truly submerge themselves in the tasks at hand – and allows you to squeeze in a little extra teaching along the way.
 
While cooking together can help to fill time in the day, it will also give the kids a great opportunity to make their own snacks or treats for the week, bonus!
 
We've got 3 great recipes to get your family started; Smiley Face Cookies, Apple Crumble Muffins and Chunky Monkey French Toast Roll-Ups. 
 
Some tips before you start out:
  • set out all ingredients and utensils
  • get everyone to thoroughly wash their hands. Smaller children may also enjoy wearing an apron (dress-ups and cooking, perfect combination!)
  • fill the sink with warm soapy water for easy washing up on the go
 
 

Smiley Face Cookies

Ingredients :
makes 12
  • 1 roll choc chip cookie dough
  • 1 packet chocolate gems
Method
  1. Defrost cookie dough (if stored in freezer) and preheat oven to 175ºC.
  2. Cut cookie dough into 12 portions. 
  3. Use clean, wet hands to roll each portion into a ball. Place on a lined oven tray and gently flatten with the palm of your hand.
  4. Use chocolate gems to decorate smiley faces, or desired shapes on cookies.
  5. Bake for 12-15 minutes until cookies are golden. Remove from oven and allow to cook before enjoying.
Cooking notes:
  • roll the dough into 6 balls and make giant cookies!
  • place prepared cookies into the fridge to chill for 30-60 minutes before baking. This will help stop the cookies spreading on the oven tray while baking.

Apple Crumble Muffins

Ingredients :
makes 12
  • 225g butter
  • 170g natural yoghurt
  • 1/2 cup milk
  • 2 eggs
  • 300g spelt flour
  • 1 tbsp baking powder
  • 1 cup brown sugar
  • 2 tsp cinnamon
  • 2 apples
Crumble Mixture
  • 75g rolled oats
  • 75g plain flour
  • 70g brown sugar
  • 1 tsp ground cinnamon
Method
  1. Set oven to 160°C. Line a 12-hole muffin tray.
  2. Melt 125g butter and whisk together with yoghurt, milk and eggs.
  3. Stir in dry muffin ingredients and combine well. Dice and add apples.
  4. Melt remaining butter. Add to a bowl along with crumble ingredients. Mix to crumble consistency.
  5. Add muffin batter to prepared tray. Top with crumble mix, gently pressing into muffin mix. Bake for 30 minutes until firm on top and a skewer inserted into the centre comes out clean. 
Cooking notes:
  • Caramelise the apples! Add diced apples, 1 1/2 tbsp butter, 1 tbsp brown sugar, pinch salt, and 1/2 tsp cinnamon to a saucepan over medium-high heat and cook for 8-10 minutes until apples begin to soften

Chunky Monkey French Toast Roll-Ups

Ingredients :
make 10
  • 3 eggs
  • 1 tbsp milk
  • 10 slices sandwich bread
  • 3 bananas
  • 1/2 cup peanut butter
  • 1/4 cup chocolate chips
  • 1/4 cup sugar
  • 1 tsp ground cinnamon
Method
  1. Crack eggs into a bowl. Add milk and whisk to combine. Set aside.
  2. Roll each slice of bread flat with a rolling pin. Remove the crusts.
  3. Use a fork or potato masher to roughly mash bananas.
  4. Spread desired amount of peanut butter onto bread. Add mashed banana along the edge of the bread in a strip. Sprinkle choc chips over banana.
  5. Roll up the bread around the banana mixture and seal to make a roll.
  6. Heat a large frypan with oil or butter. Dip each roll-up in egg mixture. Add to pan seal-side down, as you go. Cook for 2-4 minutes each side until golden. Remove to a plate.
  7. Combine sugar and cinnamon in a bowl. Sprinkle over cooked roll-ups to serve.
Cooking notes:
  • for a nut-free option, switch the peanut butter for tahini or make your own chocolate hummus
  • switch the bread for wraps if you have some on hand. Skip step 2 and cut roll-ups to desired size before dipping in egg mixture.
  • customise the fillings; cream cheese with sliced strawberries, chocolate spread, diced apple and maple syrup.
  • switch it up completely and make savoury versions; ham and cheese, salami and tomato pizza paste are great options!
  • make a big batch and store cooked roll-ups in the freezer. Reheat to serve.
