Ramen Essentials Bundle

- 1 pouch ramen broth
- 1 packet wheat noodles
- 1 smoked chicken breast, 190g
Method
- Cook noodles in boiling water according to packet instructions or until al dente. Drain and rinse.
- Warm ramen broth.
- Slice smoked chicken.
- Divide ramen broth and noodles among bowls. Top with slices of smoked chicken (see notes).
Serve with sliced capsicum, spring onions and fresh corn kernels if desired.

Ramen with Boiled Eggs & Mixed Mushrooms
Ingredients :
serves 2
- 1 packet wheat noodles
- 1 leek
- mixed mushrooms such as enoki and shiitake
- soy sauce (or tamari)
- 4-6 free-range eggs
- 1 pouch ramen broth
- 1 packet seaweed snacks
Method
- Cook noodles in boiling water according to packet instructions or until al dente. Drain and rinse.
- Boil eggs to your liking (6 minutes will give you soft, runny yolks. Cook for longer if you prefer). Peel and halve.
- Cook sliced leek in a frypan with oil/butter for 6-8 minutes or until caramelised. Remove and set aside, keep pan over heat.
- Trim and slice mushrooms. Add to pan with 1 tbsp soy sauce and cook for 4-6 minutes or until browned.
- Warm ramen broth.
- Serve noodles and broth in bowls. Top with mushrooms, caramelised leek, halved eggs and seaweed.

Ramen with Pork Belly & Chilli Oil
Ingredients :
serves 2
- 400g pork belly
- 1/4 cup sesame oil (or any neutral oil)
- 3 garlic cloves
- 2 tsp dried chilli flakes
- 1 packet wheat noodles
- 1 red capsicum
- 1 corn cob
- 1 bunch chives
- 1 pouch ramen broth
Method
- Preheat oven to 180ºC.
Use paper towels or a clean towel to remove any moisture from pork belly skin. Use a metal skewer, small knife or fork to poke holes all over the pork skin. Place in a lined oven dish and coat pork skin with 1cm salt (don't worry, you will brush this off before eating!). Roast for 50 minutes. - Remove pork from oven. Switch oven setting to grill/broil. Remove excess salt from pork. Place pork until the grill for 10-20 minutes (turning as necessary) until skin is crisp. Remove from oven and set aside to rest.
- Cook noodles in boiling water according to packet instructions or until al dente. Drain and rinse.
- Heat 1/4 cup sesame oil in a pan over medium heat. Cook slices of garlic for 3-4 minutes until golden. Remove to a bowl and stir in 2 tsp chilli flakes.
- Warm ramen broth.
- Thinly slice capsicum. Cut corn kernels from cob. Thinly slice chives. Cut pork into bite-sized pieces.
- Divide noodles among bowls. Ladle over ramen broth. Top with crispy pork belly pieces and fresh vegetables. Sprinkle over chives and drizzle over chilli oil.
