Banana Bread Recipe
Ingredients :
serves 8-10
- 270g soft light brown sugar
- 2 bananas
- 140g butter
- 2 eggs
- 280g white spelt flour
- 1 tsp baking powder
- 1 tsp bicarb soda
- 1 tsp ground cinnamon
- 1 tsp ground ginger
Method
- Preheat oven to 170ºC, grease and line a loaf tin.
- Add brown sugar and 2 eggs into a large bowl. Beat with an electric mixer to combine.
- Slice and add bananas, use the mixer to mash and combine.
- Stir in spelt flour, baking powder, bicarb soda & spices and beat until well mixed.
- Melt 140g butter, add to bowl and beat to combine.
- Pour batter into the prepared loaf tin (use a cake tin if you don’t have a loaf tin).
- Bake on the bottom shelf for 50-60 minutes (check after 40 minutes!) or until the loaf is firm to touch and a skewer inserted in the centre comes out clean.
- Allow to cool then slice to serve.
