Blue Mussels in tomato and garlic sauce with Sour Dough

- Jewelled Tomato & Pomegranate Salad
- 2 tomatoes
- 1 red onion
- 1 chilli
- 1 garlic bulb
- 400g chopped tomatoes
- Heat a saucepan with 1 cup water (or sauce of choice) over medium-high heat and cover with a lid. When the pan is steaming, add mussels. Cover and allow to cook for 3-5 minutes until shells open. Discard any unopened shells.

Set oven to 220C. Wedge red onion and tomatoes. Halve garlic bulb and trim red chilli. Toss together in an oven dish with oil, salt and pepper. Roast for 20 minutes.

Use a stick mixer to blend the roasted vegetables lightly (except the garlic), leaving them quite chunky. Add to a saucepan with chopped tomatoes and squeeze in the roasted garlic cloves. Cook for 5 minutes, covered. Season well to taste with salt and pepper.

Add cooked mussels and toss to coat with the sauce. Serve with bread.

- The Easter Bunny may beat you to the kitchen on Sunday morning, but these share boards will make it simple for you to get some brekky food on the table, and you can attempt to put some wholesome food in tummies before the overzealous chocolate consumption begins.
- For extra servings to your bagel board, add thinly sliced cucumber and tomatoes, or turn it into a breakfast board with scrambled eggs.

Tuscan Veggie Tray Bake
- When making the piccata sauce, deglaze the pan with white wine or chicken stock after cooking the pork to pick up all the flavourful browned bits. Add fresh parsley, or a pinch of chilli flakes for added depth.
- If you have any leftover veggies, toss them through cooked pasta with a drizzle of olive oil and extra feta, or add to a wrap or pita with a dollop of hummus or pesto.

Almond Lemon Cake
- Want to be organised? You can boil the potatoes, make the romesco sauce, and the almond lemon cake the day before!
- Leftover romesco sauce can be used in sandwiches or as a dip with cheese and crackers. Alternatively, transform it into a loaded plate! Reheat both potatoes and romesco, top with fried eggs, crumbled feta, or fresh herbs for a quick meal.
- Use leftover lamb to make a shepherd's pie! Shred the leftover lamb, mix with sautéed onions, carrots, and peas in a gravy, then top with mashed potatoes and bake until golden.

- To make a gravy, add the reserved sauce from the beef packet to a saucepan over medium heat to reduce. Thicken with 1–2 tablespoons of cornflour, squeeze in a few cloves of roasted garlic and season to taste with salt and pepper.
- Leftover roast beef can be thinly sliced and served in sandwiches, wraps, or rolls with horseradish or mustard.


The Humble Potato
- Slow Cooked Lamb Shanks with mashed potatoes

Creamy Potato Bake
- 1.2kg medium potatoes
- 1 onion
- 250ml fresh cream
- 1 packet shredded cheddar cheese
- Preheat oven to 220ºC. Thinly slice potatoes and onion. Toss together in an oven dish with salt and pepper. Pour cream and 1 cup water (or milk) over potatoes and sprinkle with shredded cheese.
- Cover and bake for 40 minutes until potatoes are tender.
- Remove cover and bake for 10 minutes until cheese is golden and bubbly.
- Use a mandolin to thinly slice potatoes and onion.
- The potato bake tastes even better the next day; great motivator to prep the bake the day before serving!
- For added flavour bombs try adding a sprinkle of nutmeg or allspice to the bake, use liquid stock instead of water, or add some stock paste to the cream mixture.
- If preferred, roast the potatoes on a lined oven tray (toss with oil, salt and pepper, and roast until golden and tender). Blend the cream with feta and fresh herbs to make a sauce to serve on the side.
