The only thing more Easter than this citrus-marinated side of salmon is probably the Easter Bunny themself! Pair this salmon dish with some of our favourite sides.
Lemon, orange, garlic and olives come together to make a beautifully bright, zingy marinade for a side of salmon! This dish is perfect for sharing with friends and family along with some of our favourite side dishes available on the Market Place (we've chosen the Crispy Tallow Smashed Potatoes and Jewelled Rocket Salad). For this salmon, we recommend using a whole side of salmon or larger fillets, this will give you plenty to serve 6-8 with side dishes. Alternatively, put this marinade recipe in your back pocket and use it the next time you have salmon fillets for a weeknight dinner.
Citrus Side of Salmon
Ingredients :
- 1.5kg side of salmon
- 4 garlic cloves
- 1 lemon
- 1 orange
- 1/2 cup olive oil
- micro greens, Crispy Tallow Smashed Potatoes and Jewelled Rocket Salad to serve
Method
- Preheat oven to 180ºC.
- Crush garlic cloves. Zest and juice lemon and orange. Halve or roughly chop olives. Add to a bowl as you go. Pour in olive oil and whisk to combine.
- Place salmon, skin side down, on a lined oven tray. Season both sides with salt and pepper. Drizzle over 1/2 prepared marinade (reserve remaining marinade).
- Bake for 15-20 minutes until the salmon is cooked to your liking.
- Transfer salmon to a serving platter. Pour over the remaining marinade. Serve with our tallow smashed potatoes and jewelled pomegranate salad.
