Was the Easter Bunny very generous at your house this year? We've got a simple muesli bar recipe to help use up those leftover chocolates!
This simple muesli bar is the perfect way to use up some of those chocolates that still seem to be magically appearing around the house! It's super easy to make and is completely customisable.
Use cereal, muesli, seeds and nuts, even dried fruit that's already in your cupboard! We used honey and coconut oil, but switch to maple syrup and coconut oil, or a mix of butter and coconut oil if you need to use it up!
Keep refrigerated and hand them out as snacks, pack them for a picnic, or in lunch boxes when school goes back.
Chocolate Muesli Slice
Ingredients :
- 2 1/2 cups muesli
- 1/2 cup nuts or seeds (we used almonds, pepitas seeds and sunflower seeds)
- 1 cup puffed rice (can be substituted for puffed quinoa, puffed buckwheat or puffed brown rice)
- 3/4 cup coconut chips
- 3 tbsp honey
- 1 cup coconut oil
Method
- Line an oven dish (approximately 20cm x 20cm) with baking paper.
- Add muesli, seeds and nuts, puffed rice and coconut chips to a large bowl.
- Add honey and coconut oil to a saucepan over medium-low heat. Warm to melt coconut oil.
- Pour coconut oil and honey mixture into bowl. Mix to combine all ingredients well.
- Spread evenly into lined dish and refrigerate to set (approximately 1 hour).
- Add chocolates to a heat-proof bowl over a small saucepan of simmering water (make sure the water is not touching the bowl). Mix until chocolate is melted.
- Spread chocolate evenly over muesli slice. Return to fridge to set. Cut into even portions. Keep refrigerated until ready to eat!
