Quick and easy beef stir-fry with capsicum, broccoli and cashew nuts in homemade teriyaki sauce and served over brown rice.
1. Cook the rice
Place rice in a saucepan and cover with plenty of water. Bring to the boil and simmer for 15 minutes or until tender.
2. Combine sauce ingredients
Grate ginger and combine with crushed garlic, 4 tbsp soy sauce, 3 tbsp vinegar, 2 tbsp sugar, 3 tbsp water and 1 tsp cornflour. Chop capsicum and cut broccoli into small florets.
3. Brown the beef
Heat a large frypan over high heat. Toss beef strips in 1 tbsp oil then cook in batches for 1-2 minutes or until browned. Remove and set aside on a plate as you go.
4. Cook the vegetables
Add oil to the heated pan and tip in broccoli and capsicum. Pour in sauce, stir to combine. Cover and cook for 2 minutes then take off heat (see notes).
5. Return the beef
Return beef and add cashew nuts, stir to warm through.
6. Finish and plate
Serve beef teriyaki on brown rice and finish with chopped chives. Season with black pepper to taste.
Notes
Add in more water and cornflour (combined) if you would like more sauce.
No beef option - beef strips are replaced with chicken strips. Increase cooking time to 4-5 minutes on each side or until cooked through.
