San Choy Bau - Chinese for lettuce wraps, the name says it all! Fresh crisp lettuce leaves filled with red rice, pork mince and veg with a red chilli and spring onion garnish, that fits perfectly in the palm of your hand!

1. Place rice in a saucepan and cover with water. Bring to the boil and simmer for 15-20 minutes until tender. Drain and rinse.
2. Separate and rinse lettuce leaves (see notes). Slice spring onions (reserve some tops for garnish). Slice Asian greens. Julienne or grate carrot. Slice chilli. Keep seperate.
3. Peel and grate ginger. Crush garlic. Combine in a bowl with 3 tbsp sesame oil and 2 tbsp vinegar. Season with salt and pepper.
4. Heat pan over medium-high heat. Add spring onions and pork mince along with 1 tbsp oil and 3 tsp five spice. Cook for 5-6 minutes, breaking up with a spoon. Add Asian greens and carrot. Cook for 2 minutes until just wilted
5. Toss drained water chestnuts, cooked rice and prepared seasoning to pan until well combined. Season with salt and pepper to taste.
6. Serve pork and rice at the table with lettuce cups for filling. Garnish with chilli and spring onion tops.

Serve with sweet chilli or hot chilli sauce if desired.
