Quick and easy pan fried fresh fish fillets served with roast baby potatoes, crunchy apple salad and a creamy capsicum sauce.

1. Roast the potatoes
Heat oven to 220ºC. Halve or quarter potatoes, wedge onion. Toss on a lined oven tray with oil, 1 tsp paprika, 1 tsp lemon pepper and salt. Roast for 25 minutes or until golden and tender.
2. Prepare the apple salad
Halve cherry tomatoes, dice cucumber and apple. Trim and halve snow peas. Toss together with 2 tsp olive oil, 1 tsp vinegar, salt and pepper.
3. Make the sauce
Slice mint leaves (roughly 2 tbsp) and chop capsicum strips. Combine with yoghurt and 1 tbsp olive oil. Season to taste with salt and pepper.
4. Season & cook the fish
Season fish with 1 tsp paprika, 1 tsp lemon pepper and salt. Heat a frypan with oil/butter (see notes) and cook fish for 3-4 minutes on each side, or until cooked through.
5. Finish and plate
Serve fish fillets with roast potatoes, apple salad and capsicum sauce.
Notes
Replace lemon pepper with dried oregano or grated lemon zest and pepper.
If you prefer, place fish on a lined oven dish and cook in the oven instead!
