Super tasty and delicious ‘brinner’ rolls with sunny eggs and bacon. Served with roasted baby carrots and burger relish.

1. Set oven to 250ºC (see notes). Trim baby carrots and toss with oil, salt and pepper on one side of a large lined oven tray. Add bacon slices next to the carrots and cook in the oven for 15 minutes.
2. Slice tomatoes and avocado. Place on a platter along with spinach and take to the table.
3. Heat a large frypan with oil/butter. Crack in eggs and cook to your liking. Season to taste.
4. Halve bread rolls and warm in the oven for 2-3 minutes.
5. Assemble egg and bacon rolls at the table with fresh ingredients, bacon, egg and relish. Serve with a side of carrot chips and more relish for dipping (see notes).
Notes:
Don’t spend time waiting for the oven to heat up, place tray in oven as soon as the prep is finished (step 1). If you have an oven which is a bit slow to warm up, simply increase the cooking time instead!
Serve with any other favourite sauce of choice such as barbecue or tomato sauce!
