This recipe is *amazing* we forgave you for the beetroot gnocchi recipe after we tried this recipe. I would never have guessed that this soup was parsnip-based... it almost tasted like it had cream in it, as the consistency was so creamy! Rich and satisfying. The best part of this soup surprisingly enough was the topping...the roasted pepitas and capers. WOW! Sooo gooooood. This is a great comfort food for winter. We ate the whole thing in one sitting.
