INGREDIENTS:
- 1 large zucchini
- 2 tbsp pesto
- 1/2 cup quinoa (cooked)
- 1/2 red capsicum
- 1/2 carrot
METHOD:
- Using a peeler, slice the zucchini lengthways into thin strips.
- In a small bowl, mix together the pesto and quinoa together. Lay down two sheets of zucchini overlapping one another (or just one depending on how thick your zucchini is) and spread over roughly 1 tbsp of quinoa.
- At the end of each strip, top with veggies then role zucchini up like a sushi roll. Repeat with remaining sliced of zucchini.
- Serve immediately, pack in lunch boxes and enjoy!
