Garlic Prawns with Risotto Milanese

To safely defrost prawns you can place them in the fridge for approximately 8 hours before cooking or place the unopened prawn packet in cold water.
Prawns are cooked when they have lost their translucency.
Serve bread to dip into the pan of garlic oil once all the prawns are eaten!

Risotto
Risotto
- 1 brown onion
- 1 packet (0.5g) saffron threads
- 300g arborio rice
- 1 small jar (20g) stock paste
- grana padano cheese
Prawns
- 2 x 250g raw prawn meat
- 4 garlic cloves
- 1 large bunch of herbs (we used a mix of parsley and dill)
- 1 red chilli (optional)
- 1 lemon
- 1 bunch broccolini
Method
- Bring prawns out to defrost (see notes)
- Heat a large frypan with 2 tbsp oil/butter over medium-high heat. Peel and dice onion, sauté for 3-4 minutes. Add saffron threads and stock paste, cook for 2 more minutes then stir in arborio rice until well coated.
- Add 2 cups water to rice, stirring until water is nearly absorbed. Add water, in cupfuls, to the rice, allowing it to absorb after each addition. Cook until rice is tender (we used 5 1/2 cups water).
- While risotto is cooking, get started on the prawns! Finely slice garlic cloves, roughly chop chilli and herbs. Zest lemon.
- Heat a large frypan over high heat with oil. Add prawns to pan, in batches and cook for 30 seconds - 1 minute on each side (see notes). Remove from pan.
- Reduce heat to medium. Add 1/2 cup olive oil to the pan along with garlic. Cook for 4-5 minutes until garlic becomes golden. Add in chilli, 1/2 lemon zest (reserve remaining for step 8) and juice from lemon. Cook for further 2 minutes.
- Add prawns back into pan along with chopped herbs. Season with salt and pepper and toss to combine. Remove from heat.
- Heat a second frypan over medium-high heat with oil. Trim broccolini and add to pan along with reserved lemon zest. Cook for 2-4 minutes until stems are tender. Season to taste with salt and pepper.
- Serve risotto, prawns and broccolini tableside for everyone to enjoy (see notes).
