This dessert is the perfect end to dinner with family and friends. It’s also easy to make ahead of time and great for using up leftover fruit from the week!
Serves 8 - 20 mins
Ingredients:
Lemon Sauce
• 300ml whipping cream
• 3 tbsp lemon curd (to taste)
• 3 tbsp lemon curd (to taste)
Coconut crumb
• 75g butter
• 2 tbsp brown sugar
• 120g (1 cup) rolled oats
• 50g (1/2 cup) desiccated coconut
• 1/2 tsp ground cinnamon
• 2 tbsp brown sugar

Fruit
• 1/2 pineapple
• 1/2 rockmelon
• Red grapes
• 1 punnet strawberries
• 2 apples

Method:
1. Heat a pan over medium heat, add butter and cook for 3-4 minutes until golden brown.
2. Add sugar, cinnamon, oat and coconut mixture, continue to cook for further 3-4 minutes, stirring, then take off the heat.
Allow to cool then crumble.
3. Whip cream to medium peak and fold through lemon curd (to taste).
4. Cut fruits into bite-size pieces and arrange on a platter.
Serve with lemon curd cream and coconut crumb.
