Whether you are entertaining or snuggled up on the couch with a good movie, this Gluten-free and vegan-friendly dessert is the perfect after-dinner dessert all year round.
~ Serves 2-4 Ingredients – 400ml coconut milk – 5 tbsp cacao powder {We used the Honest to goodness organic raw cacao available on our Marketplace here!} – 5 pitted Medjool dates – Pinch of sea salt {You can purchase the amazing Murray River salt flakes on our Marketplace here!} Toppings – Toasted coconut – Toasted pistachios Note - We think fresh berries, toasted hazelnuts or grated dark chocolate would also be perfect additional toppings.
Method 1. Use a stick mixer or blender to blend all ingredients together until smooth. 2. Divide among 2-4 pudding cups or bowls. 2. Refrigerate for 2 hours. 3. Garnish with toppings of choice.
Dates can be substituted with 3tbsp maple syrup. For a bring to work treat, divide among small Bio-Pak containers and enjoy!
