{MAKES 24}
INGREDIENTS:
1 cup rolled oats 1 cup shredded coconut 1 cup plain flour 3/4 cup coconut sugar 1 cup diced dried apple 1 tsp cinnamon 125gm butter 2 tbsp golden syrup 1/2 tsp bicarb soda 1 tbsp boiling water
METHOD:
1. Pre-heat oven to 160 degrees. 2. Combine all dried ingredients in a large bowl, mix to combine. 3. Melt butter with golden syrup in a small pan (or in the microwave for 20 second bursts, 2-3 times). 4. Dissolve bicarb soda in boiling water, add to butter mixture (this will fizz and grow). Combine with dry ingredients, and mix until well combined. 5. Roll tablespoon fulls into balls, press down lightly and place on a lined baking tray. Bake for 12 - 15 minutes until golden. 6. Remove from oven and allow to cool on the tray. Store in an airtight container……if they last that long!
