Here are 3 tasty variations to enjoy.
BLUEBERRY, VANILLA & COCONUT
You get a creamy, mildly sweet and super decadent porridge by cooking the grains with coconut milk and vanilla beans. Stir through fresh or frozen blueberries for a pop of flavour, colour and vitamin C.
Ingredients:
- 1/2 cup ancient grains porridge mix
- 165g coconut milk
- 165mL water
- 1/2-1 cup fresh/frozen blueberries
- 1/2 tsp vanilla essence or paste
- coconut flakes
- maple syrup
- Combine porridge mix, coconut milk, water and vanilla in a small saucepan. Cover and simmer for 5-10 minutes or until thickened to your taste.
- Stir through half the berries.
- Top with remaining berries, coconut flakes and maple syrup.
TOASTED HAZELNUT & CARDAMOM GRILLED PEAR
This gourmet take on breakfast porridge is to die for! Tender, grilled pears with butter, cardamom and maple syrup, crunchy toasted hazelnuts, and soft porridge transform a basic breakfast into a decadent one.
Ingredients:
- 1/2 cup ancient grains porridge mix
- 1/2 cup milk (of choice, we used oat)
- 1/2 cup water
- 1 pear
- 1 tsp ground cardamom
- 1 tbsp maple syrup
- 1 tbso butter
- toasted hazelnuts
- Combine porridge mix, water, milk and 1/2 tsp cardamom in a saucepan. Cover and simmer for 5-10 minutes or until thickened to your taste.
- Slice pear and cover with 1/2 tsp cardamom and 1 tsp maple syrup. Grill on a griddle pan in butter for 2-3 minutes each side or until tender.
- Serve porridge in a bowl, topped with grilled pear, roughly chopped hazelnuts, and a drizzle of the butter-maple syrup sauce leftover in the griddle pan.
CLASSIC APPLE, PEAR, ALMOND & CINNAMON
You can't go wrong with this classic combo. Tender fruit, warming cinnamon, and crunchy almonds work together beautifully in this soothing breakfast bowl.
Ingredients:
- 1/2 cup ancient grains porridge mix
- 1/2 cup water
- 1/2 cup milk (of choice, we used full-cream)
- 1 small apple, diced
- 1 small pear, diced
- almonds
- 1 tsp cinnamon (or, use a mix of cinnamon, ginger, cloves, and cardamom)
- Combine porridge mix, milk, water, 1/2 the apple, 1/2 the pear and cinnamon (or other spices) in a small saucepan. Cover and simmer for 5-10 minutes or until thickened to your taste and fruit is tender.
- Serve porridge in a bowl topped with remaining pear, apple, and chopped almonds.
- Enjoy with a drizzle of maple syrup and milk.
